Cooking With MsMoore : Homemade Jerk Chicken 

I made Jerk Chicken once with my sister, over 5 years ago ! I mentioned it to my man, when we first started dating & told him I would make it for him…. and he hasn’t let me forget that I haven’t yet, in the 5 years we have been together !! lol 

I decided to surprise him and make it for dinner tonight! I made the jerk sauce yesterday and marinated the chicken in the fridge overnight. I’ll warn you now that this recipe is very spicy! If you want to tone it down, only use about 4 scotch bonnet peppers.


  • Chicken thighs, wings & breasts (whichever pieces of the chicken you want to use, these are just the pieces I used)
  • 3-6 Scotch Bonnet peppers (depending on how spicey you want it)
  • 2 Tbsp oregano 
  • 2 Tbsp ground allspice 
  • 8 cloves of garlic 
  • 3 medium onions 
  • 2 Tbsp sugar 
  • 2 Tbsp salt
  • 2 Tsp ground black pepper 
  • 1 1/2 Tsp ground cinnamon 
  • 1 Tsp ginger 
  • 1/2 cup olive oil 
  • 1/2 cup soy sauce 
  • Juice of one lime 
  • 1 cup orange juice 
  • 1 cup white vinegar 



  1. Chop onions, garlic & peppers (they don’t have to be chopped too fine, since they will be processed in the blender)  
  2. Combine all the ingredients (except Chicken) into a blender, and blend until smooth to make the Jerk sauce      
  3. Using a small sharp knife, pierce small cuts into the chicken pieces, this helps the sauce really get into the chicken 
  4. Rub jerk sauce into the chicken pieces, and place them into a dish. Pour some extra sauce over the chicken for marinating. Keep some for basting later  
  5. Cover dish with plastic wrap and put in the fridge to marinate over night

The next day:

  1. Preheat oven to 375 degrees Farenheit
  2. Place the baking dish with chicken on the middle rack and allow it to cook for 1 hour and 20 mins.      

While the chicken cooks, it really fills your house with the yummy smells of the Caribbean! I served it with rice and fried plantain (my mans fav!) I used some of the excess jerk sauce to pour over the rice as well.
